Cranberry-Orange Quick Bread
I love making "quick breads." Most of the time, all you have to do is mix stuff together, throw it in the oven, and that's it! Very simple and very yummy.
Cranberry-Orange Quick Bread

Prep time: 35 min, 50 min bake
Serves: one 9-inch loaf
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1/2 tsp orange extract
1 1/2 tsp baking powder
1 tsp fine salt
1/2 tsp baking soda
3/4 cup orange juice
2 tbs unsalted butter (1/4 stick), melted and cooled slightly, plus more for coating pan
1 large egg, lightly beaten
1 tsp vanilla extract
1 1/2 cups cranberries, thawed if frozen, sliced in half
Directions:
Heat oven to 350 degrees and arrange rack in the middle.
Coat 9x5" loaf pan with butter, set aside. (I use cooking spray.)
Place flour, sugar, orange extract, baking powder, salt, and baking soda in a large bowl and whisk to aerate and break up any lumps. Add orange juice, melted butter, egg and vanilla and stir with spoon or rubber spatula until just combined.
Stir in cranberries until evenly distibuted.
Scrape batter into loaf pan, pushing into corners and smoothing the top.
Bake until toothpick comes out clean, about 55 min. Place pan on wire rack to cool for 15 min, then turn bread out onto rack and cool completely.
